Barbecue Chicken Casserole


I made a new recipe yesterday. It was good. I didn't take a picture of it so I just found something with a vague resemblance. Actually, I didn't follow the recipe exactly and I cooked in the slow cooker for six hours but i'll give you the original recipe to adapt as you wish ;)

Apologies to Suzanne for eating chooks, I wonder if it would work with tofu?

1 tablespoon vegetable oil
1 kg chicken thigh fillets, diced
1 onion, diced
1 clove garlic, crushed
2 tablespoons brown sugar
2 tablespoons worcestershire sauce
2 tablespoons apple cider vinegar
400 gram can diced tomatoes
1/2 cup chicken stock

brown the onions in the oil
brown the chicken
add the garlic , worcestershire sauce, sugar, vinegar, tomatoes & chicken stock
simmer 'til the chicken is tender
garnish with chopped parsley and serve with mash

  3. Hey that recipe sounds easy enough will try that one sometime.
    Tonight we are having apricot chicken.
    Also meant to pass on the news that Helen didn't get into The College of the Arts Secondary School. She is very dissapointed.
    She is not going to try again as she will have already started her V.C.E. and doesn't want to change schools in another 12 months.
    It was very hard to get into. Helen has heard on the grapevine they only took 25 people which included dancers, singers and musicians for the whole school.approx 400 people applied.
    Hope you have an enjoyable weekend and i hear the weather is warm there.
